      Hello Rosemary,
Boil the Matokes with their skin on and let them cool off before peeling, this way, they woun’t turn the color.
      hope this helped.

  3. Hello! Well, um, I’ve been working on a project for school on Kenya and I need a “wow” factor, which for me is going to be food. I was wondering if there was a specific recipe for me to use? I probably need something I can make a lot of at once and possibly no peanuts? Thanks!

  4. Ahh! So happy to have found your website! I’m gonna work by way through every single recipe by the end of the year!
